Pumpkin Blondies


100g white chocolate
30g margarine or butter
250g pumpkin puree
3 eggs
50g  light muscavodo sugar
1 teaspoon extract or vanilla paste
140 flour
1/2 teaspoon baking powder
pinch of salt
50g dark chocolate, coarsely chopped
50g white chocolate, coarsely chopped


Line the bottom and sides of a 22x 22cm baking pan with parchment paper. Preheat the oven to 160c.
Melt chocolate (100g) and butter in a double-boiler over gently simmering water. Stir until smooth, then remove from heat and leave to cool down.

Mix flour with baking powder, salt and sugar. In a separate bowl combine eggs, vanilla paste and pumpkin puree, then pour melted chocolate into it and mix well. Add the flour mixture and combine thoroughly. Finally fold in 3/4 of white and dark chocolate. Pour everything into prepared pan and spread into an even layer. Add the rest of the chocolate on top. Bake for around 30 minutes.
