Chocolate chip cookie cake

Ingredients (for 9-10 cookies):

2 1/4 cups all-purpose flour
1 teaspoon baking soda
3/4 teaspoon salt
225g butter, softened
3/4 cup granulated sugar
3/4 cup packed brown sugar
1 teaspoon vanilla extract
2 eggs
50-100g mini chocolate chips

Directions:

Combine flour, baking soda and salt in a small bowl. Beat butter, granulated sugar, brown sugar and vanilla extract in a large bowl then mix until creamy. Add eggs, one at a time, beating well after each one. Gradually beat in the flour mixture. Stir in the chocolate chips.Place in refrigerator for 45 min.

Preheat oven to 180C.
Using an ice cream scoop, place one ball of cookie dough onto a parchment lined cookie tray.  Pressing with your wet hand (or foil) gently flatten the ball of dough. Continue the flattening until dough becomes a thin round disc (around 14-15 cm in diameter). Repeat all steps with the remaining cookie doughs.
 
Bake for 10-14 minutes or until the golden brown/dark gold color appears around the edges. Cool on baking sheets for 2 minutes; remove to cool completely. When cold, cover first cookie with a thin layer of cream. Top with another cookie and continue until all cookies are stacked on top of each other.

Place in refrigerator for 4-6h.
 
Cream:

400- 500g mascarpone cheese
6-10 tablespoons Nutella

Mix mascarpone with Nutella.
