Anzac Biscuits

Ingredients( for 26-30 biscuits):

1 cup plain flour
2/3 cup sugar
1 cup oats
1 cup desiccated coconut
1/2-3/4 cup sunflower seeds( optional)
125g butter( or margarine)
1/4 cup golden syrup( you can use also honey)
1/2 teaspoon bicarbonate of soda
1 tablespoon boiling water


Preheat oven to 1800C. Line big biscuit try with baking paper.
Mix together in a large bowl: flour, sugar, oats, coconut and sunflower seeds.
Combine butter and golden syrup in small pan. Stir over low heat until butter has melted and mixture is smooth, remove from heat. Dissolve soda in water, add immediately to butter mixture. It will foam up instantly. Add butter mixture to dry ingredients. Stir until well combined. Roll 1-1,5 tablespoon of mixture into balls, place on prepared trays. Flatten gently with fingers( allowing room for spreading). Bake for 10-12 minutes or until golden-brown. Store in an airtight container.
