Gummy Bear Thumbprint Cookies

Ingredients ( for 20 cookies):

115g  butter, softened
1/4 cup sugar( or light brown sugar)
1 egg yolks
1/2 teaspoon vanilla extract
1 cup all-purpose flour, plus 1/4 cup extra
2 pinches of salt
1/8 teaspoon( or 2 big pinches) baking powder( optional)
20 gummy bears( one per cookie)


In a large bowl, cream together butter and brown sugar. Add egg yolks. Stir in vanilla extract. In another bowl mix 1 cup of flour, salt and baking powder( optional) and add to butter, stirring until completely combined( if the dough is too soft add additional 1/4 cup flour) Cover bowl with plastic wrap and set in the freezer for 10-15 minutes.
Preheat the oven to 1700C and line a cookie sheet with silicon mat or parchment paper .
Divide the dough to 20 equal pieces. Roll cookies into balls and arrange on the cookie sheet. Using your thumb or teaspoon, press a deep hole in the middle of the cookie. Make it deep and wide enough so the gummy bears don’t spill out. Bake cookies for 10-12 minutes, or until the cookies look almost done. Open the oven and pull the cookie sheet out and carefully place a single gummy bear in each cookie cavity. Return cookie sheet back to oven and bake until the gummy bears will melt completely( 1-2 minutes). Transfer cookies to a wire rack to cool completely.
