Chocolate cookie cake

Ingredients( for 9 cookies):
 
150g dark chocolate
125g butter( soft)
75g  muscaovado sugar
50g white sugar
1  egg( cold from the fridge)
1 teaspoon vanilla extract
150g  flour
30g cocoa powder
1 teaspoon bicarbonate of soda
1/2 teaspoon salt

optional: 50g mini white chocolate chips
 
Directions:
 
Preheat the oven to 170°C.
 
Melt the dark chocolate in a heatproof dish over a pan of simmering
water. Set aside to cool down. Put the flour, cocoa, bicarbonate of soda and salt into a bowl.
Cream the butter and both kinds of sugar in another bowl. Add the melted chocolate and mix together.Beat in the vanilla extract and cold egg, and then mix in the dry ingredients. Finally stir in the chocolate chips.Scoop out 9 equal-sized balls. Place maximum 3 ball of cookie dough onto a parchment lined cookie tray. Pressing with your wet hand(or foil) gently flatten the ball of dough. Continue the flattening until dough becomes a thin round disc( around 7-8 cm in diameter). Cook for 12-13  minutes. The longer you bake the crunchier they will become :)

Cream:
 
250- 300g mascarpone cheese
125- 150ml double cream
2- 5 tablespoons icing sugar
3- 4 tablespoons  Baileys Irish Liquor
 
Mix mascarpone with icing sugar. Beat cream to a sift peak. Gently combine cream and mascarpone. Finally add Baileys.

Cover first cookie with a  layer of cream. Top with another cookie and continue until all cookies are stacked on top of each other.
