Banana Chocolate Chips Baked Mini Doughnuts


1 cup mashed banana( roughly 2 medium bananas)
1/2 cup musacvado sugar
1/2 cup Greek yogurt
1/4 cup melted unsalted butter
2 eggs
1 teaspoon vanilla extract
2 cups spelt white flour( you can also use AP flour)
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup chocolate chips( or 50g chopped chocolate)


Preheat oven to 170C.
Mix: mashed banana, sugar and Greek yogurt until incorporated. Add melted butter, eggs and vanilla extract and mix. In another bowl combine flour, baking powder, baking soda and salt then add it to the batter and mix until just incorporated. Do not over mix! Fold in the chocolate chips. Grease your doughnut baking pan( or muffin pan) and fill tins 3/4 full each doughnut mold. Bake for 25 minutes 3/4 full the batter into each doughnut mold. Bake for 12-15 minutes. Allow to cool before decorating.

Buttered Rum Glaze

2 Tbsp unsalted butter
1/8 cup brown sugar
1 1/2 Tbsp milk
3/4 cup powdered sugar
1 Tbsp rum

Heat the butter, milk, and brown sugar in a small saucepan. Bring to boil then immediately remove the pan from the heat and stir in the rum and powdered sugar.
